The biscuits with olive oil are biscuits made with a shortcrust pastry in which the butter is replaced by Taggiasco Extra Virgin Olive Oil. For this recipe it is advisable to use an Taggiasco Extra Virgin Olive Oil with a light and fruity taste to not weigh down the dough and to obtain a delicate taste. The biscuits in oil are crumbly and are excellent to soak in milk for breakfast.
Ingredients for about 40 biscuits:
- 280 gr Flour 00
- 2 Eggs
- 1 Lemon rind
- 10 gr baking powder for cakes
- 1 Vanilla pod
- 100 gr Sugar
- fine salt
- 1 Eggy yolk
- 60 ml. Taggiasco Extra Virgin Olive Oil
Put the eggs whole and the yolk inside a bowl and beat with sugar for a minute then, continuing to beat, add the Taggiasco Extra Virgin Olive Oil and flavorings (the seeds of the vanilla bean and lemon zest). Sift flour and baking powder in a bowl, add salt.
Add to the mixture of eggs and sugar and start to knead : when you have all the ingredients amalgamated and obtained a smooth and homogeneous dough, wrap it in the film and place it in the fridge for at least half an hour.
After the indicated time, roll out the dough on a floured surface until you reach the thickness of half a centimeter, then cut out the round shapes with a diameter of 5 cm that you put on a pan lined with parchment paper and cook in a preheated oven at 180 degrees for about 15 minutes. Once cooked, remove the biscuits from the oven, let them cool completely and then store them in a tin box with lid or in an airtight container.
If you want to make your Taggiasco Extra Virgin Olive Oil cookies richer, before baking them, you can brush them with fresh liquid cream and sprinkle them with brown sugar!
